Hello Mark:Interesting information. I have to disagree with your take on cast iron. My wife and I cook with cast iron cookware and we love it above all else, but we also wash it in hot soapy water after every cooking event. True, that will eventually take the seasoning out and foods will stick to it, but it takes more than one washing to do that if they are seasoned properly. Also, seasoning cast iron cookware is very easy to do. So much so, that I do it regularly for our cookware. You can’t beat good knives and you have chosen some of the best. I do think it is important to learn how to properly sharpen your own kitchen knives. It is easy to do, inexpensive after the initial equipment purchase and will result in the best edge for your purposes. Of course, if a person has the money and is so inclined, why not send them out to be sharpened? Personally, I love to sharpen knives (and tools) and take it as a challenge. In any event, good job.
